  • 30 g Butter, melted
  • 200 g Cornflour
  • 500 g Cake flour
  • and a pinch of salt
  • 50 g Butter room temperature
  • 125 g Caster sugar
  • Extra caster sugar for sprinkling on top


  • Preheat the oven to 200 degrees celsius
  • Grease a 24cm square baking sheet with the 30g melted butter and set aside
  • In a large mixing bowl sift together the cornflour, cake flour, and salt two times
  • Using a whisk beat the 50g of butter in a separate bowl until light and creamy. Gradually add the 125g of caster sugar while beating continuously
  • Add the sifted flour mixture and mix lightly to make a soft dough. press The dough into the greased baking sheet leveling it with a wooden spoon
  • Lightly mark 4cm squares in the dough and bake for 10 minutes. sprinkle over a little extra caster sugar and reduce the temperature to 160 degrees celsius
